Egg Drop Soup for a Cold Day

My hubby LOVES to cook. He was home sick today and made egg drop soup. It didn't last long once the kids got home from school. The poor guy had to make his own soup while he was sick. It is so easy and VERY tasty.

Egg Drop Soup
3 C chicken broth
½ t salt
2 T cold water
1 T cornstarch
1 egg (slightly beaten)
1 scallion, finely chopped
Bring chicken broth to a boil in soup pot. Add salt and mix. Combine water and cornstarch and stir into boiling broth. Stir a small amount of hot broth into slightly beaten egg. Add egg mixture into hot broth slowly, stirring all the time. Cook until clear and slightly thickened, stirring constantly. Garnish with scallion.
