Pumpkin Spice Cookies

Did you know there is a pumpkin shortage? My friend drove to every store in town the other day looking for pumpkin to make these cookies. Apparently the floods from last year wiped out massive amounts of pumpkin patches and so there were no pumpkins to use this year!!! She finally found 10 cans at the Lins in Hurricane, but keep an eye out if you love pumpkin. I had to have my mom pick some up from our little rinky store in my hometown. They had 6 cans. I have been checking each time I go to the store, but have yet to find any here. I love pumpkin, so this is causing me some stress. I love these cookies and pumpkin pie, pumpkin cheesecake and pumpkin bread!

Pumpkin Spice Cookies:

1 box spice cake mix
1 15 oz. can of pumpkin
Chocolate Chips

Mix everything together and bake at 350 for 10 - 12 minutes. Super moist, super yummy and if you've ever done Weight Watchers, they are worth 1 point. My kids love these cookies!

I love all things pumpkin, too! My sugar pumpkins in the garden are still green and I've been complaining about having to buy my pumpkin puree this year. I hope my area doesn't suffer from a pumpkin shortage! I wish you luck finding nature's gold in a can!
