Pumpkin Chocolate Chip Cookies

Nothing says fall like pumpkin cookies!!  These have become a staple at our house the past few weeks.  It's good and bad.  Good as in they are my favorite cookie, bad on the diet!!!  I have posted this before, but it's been a few years, thought I would share it again.  This is my recipe I have used for years and it's by far the best that I have found!


Pumpkin Chocolate Chip Cookies
1 cup canned pumpkin
1 cup sugar
1/2 cup shortening
1 egg
2 cups flour
2 tsp baking powder
1 tsp cinnamon
1 tsp salt
1 tsp baking soda
1 Tbsp milk
2 cups chocolate chips
1 tsp vanilla

1) Pre-heat oven to 375
2) Combine sugar and shortening. Add egg and beat well. Add pumpkin and vanilla.
3) Add flour, baking powder, cinnamon, salt and mix by hand until combine
4) Dissolve baking soda in milk and add to above.
5) Add chocolate chips. Mix well
6) Bake for 10-12 minutes. Enjoy!

I agree... Pumpkin Chocolate Chip Cookies mean fall is definitely here. I have to make these for my son who I am going to see this weekend at UofF.

I love fall and thus I love pumpkin...don't the two just go together so well :) Thanks for the recipe! I have a hard time with pumpkin pies so I will, yet again, "practice" those again this year, maybe I will cook them long enough this year :) lol! (however it doesn't seem to keep them from getting eaten)

I just made the pumpkin cookies and they are delicious!!! My family loved them. This is the best recipe I have ever tried. Thanks for sharing!
