Easy Chicken Dinner

Barbecue Chicken:

Take 4 boneless, skinless chicken breasts and place in a 9 x 13 pan. Smother in Barbecue sauce. Cover pan with foil and bake at 350 degrees for 1 hour. Take chicken out and sprinkle your choice of Colby or mozzarella cheese on top. Replace foil and place chicken back in the oven just until cheese is melted! Super yummy and easy!

Sweet and Sour Chicken

Man! This was so good last week for our Sunday meal that I had to share it. The only thing I would do differently next time is marinate it over night. Delicious

2 garlic cloves, crushed
2 T balsamic vinegar
Juice of 1/2 a lime
Juice of 1/2 a lemon
1/3 C light brown sugar
2 T dijon mustard
1/3 C honey
1 t salt
1/2 t black pepper
4 T olive oil
2 whole chicken breasts, cut in half (skinless, boneless)
Italian Parsley

In a shallow bowl, whisk together the garlic, vinegar, lime and lemon juices, brown sugar, mustard, honey, and salt and pepper. Whisk in the olive oil. Divide the sauce into half. Reserve one half for basting and add the chicken to the other half, turning it to coat it. (this is where I would marinate it over night)
Grill the chicken for 4-5 minutes on each side, or until the juices run clear. During the last minute of grilling, baste the chicken with the remaining sauce. Garnish with parsley. Easy as that. Enjoy

Yummiest Chicken Casserole EVER

Ok, you have got to go check out Jadis Favorite Recipe Blog. She is amazing. I wish I were her friend. Holy cow. So many good things there to try. My menu for next week comes primarily from her blog. Lastnight I had chicken breasts defrosted and since I didn't make a menu for this week I didn't know what to do with them. (I obviously rely too much on my menu). So I went to her blog and found this recipe and had to try it. My family ate it way too fast for me to get a photo of it but there is one on here on her blog.

1 can cream of mushroom soup
1/2 c milk
1/4 t black pepper
1/4 c parmesan cheese
1 c frozen mixed vegetables
2 c cooked cubed chicken
2 1/2 c medium egg noodles, cooked and drained
2 c cornflakes
2-4 T melted butter
She adds minced onions and garlic so I did too.

Stir soup, milk, pepper, Parmesan cheese, vegetables, chicken and noodles in 1 1/2 qt dish. Crush cornflakes an dmix with melted butter. Sprinkle mixture over the top of the casserole. Bake at 350 for 30 minutes.

Chicken Enchilada

My hubby loves these. The recipe orgiinally came from Simplify Supper.

1 & 1/2 cups chicken, cooked and cubed (I use more, because I want a beefier or is it chickinier (is that a word?) enchilada)
1 can cream of chicken soup
1/2 cup sour cream
1 can green chilies, small can
1 can diced olives
2 cups cheddar cheese, shredded
6 Tortillas
Mix the soup, sour cream and green chilies in a bowl. Spoon filling onto edge of each tortilla then top with chicken and sprinkle with cheese. Fold into enchiladas and place in a coated 9x13 pan. Spoon any extra ingredients on top of enchiladas and bake at 350 degrees for about 30 minutes.

Easy Chicken A La King

Ok, this is seriously the easiest meal for sure!!!!! It was so quick (despite the crockpot cooking time) to throw together and it is a meal that you probably will always have all the ingredients on hand.

1 1/2 lb boneless,skinless chicken breast
10 3/4 oz can cream of chicken soup
3 T flour
1/4 t pepper
1 T dry minced onion
9 oz pkg. frozen peas
1/2 t paprika
1 lb. rotini pasta, cooked

Cut chicken into bite-size pieces and place in slow cooker. Combine soup, flour, pepper, and onion. Pour over chicken. Do not stir. Cover. Cook on high 2 1/2 hours or low 5 1/2 hours. Stir in peas and paprika. Cover. Cook on high 20-30 minutes. Stir in cooked pasta and serve.
